ZENB Elbows Pasta

The robust and spicy flavor of fresh street corn can be recreated with the help of ZENB Elbows Pasta for a unique meal idea. This full-flavored dish comes together in 20 minutes, and is a good source of fiber.

INGREDIENTS

  • 1 box (12 ounces) ZENB Elbows Pasta made from 100% Yellow Peas
  • 3 ears corn, shucked
  • 1/4 cup vegan or light mayonnaise
  • 2 limes, divided
  • 2 teaspoons chili powder
  • 1 radish, halved, thinly sliced
  • 1/3 cup grated cotija cheese
  • 1 cup loosely packed cilantro leaves

INSTRUCTIONS

Preheat grill to high. Cook ZENB Pasta as directed on package. Reserve 1/4 cup pasta cooking water. Drain; return pasta to pot.

Meanwhile, grill corn 3-4 minutes on direct heat, until marked on all sides. Cut kernels off cobs.

Stir mayo, juice and zest of 1 lime, chili powder and pasta water into warm pasta. Mix gently until well combined. Top with corn kernels, radishes, cheese and cilantro. Serve with remaining lime, cut into wedges.

Tasty Tips

For an extra kick, sprinkle additional chili powder over each serving. Standard chili powder works great, but ground ancho or guajillo chile powder are great substitutes in this dish.

Cotija cheese is a grated salty, sharp Mexican cow’s milk cheese. It is usually sold near the Mexican cheeses in the dairy case of the grocery store. Substitute grated Parmesan or Pecorino Romano cheese.
