Golden Coconut, Broccolini, and Spinach Pasta Soup is a hearty soup warms your belly and comforts your soul. Using ZENB Elbows Pasta, this soup is an good source of protein and an excellent source of fiber.

INGREDIENTS

  • 1 carton (32 ounces) unsalted vegetable broth
  • 1 jar (15 ounces) or 2 cups light alfredo sauce
  • 1 cup light unsweetened coconut milk
  • 1/2 teaspoon ground turmeric
  • 1 box (12 ounces) ZENB Elbow Pasta made from 100% Yellow Peas
  • 1/2 pound broccolini, cut into 1-inch pieces
  • 2 cups packed spinach leaves
  • 3 green onions, thinly sliced
  • 2 1/2 teaspoons black sesame seeds, toasted
  • 2 1/2 teaspoons ZENB Final Flair Garlicky Olive Oil infused with garlic

INSTRUCTIONS

Combine broth, sauce, coconut milk and turmeric in large pot. Cook on medium-high heat until simmering. Stir in ZENB Pasta; cook 3 minutes. Add broccolini; cook for 5 to 7 minutes, until pasta is tender. Add spinach; cook 1 minute or until wilted.

Divide soup into individual bowls. Sprinkle with green onions and sesame seeds. Drizzle with ZENB Finishing Oil before serving.

Tasty Tips

Substitute fresh ground turmeric root for dry ground turmeric. Use half the amount of fresh turmeric as it is much more intense than dry.
